Honey Balsamic Carrots

This is a simple side dish that I like. It brings a great flavor to the carrots.

Instructions

  1. Preheat oven to 400°F.
  2. Wash and peel the carrots.Slice thicker carrots in half to get an even cook.
  3. In a large mixing bowl, combine the olive oil, balsamic vinegar, honey, salt and pepper. Toss the carrots in the mixture to evenly coat them. Place on an oiled baking sheet. I covered my baking sheet in foil since the mixture has honey and I didn't want anything to burn on the sheet.

  4. Roast the carrots until tender. This should take about 30-35 minutes.
  5. Season with salt and parsley when plating.
