"City" Pulled Pork
I call this "City" Pulled Pork because I grew up making BBQ with big smokers outdoors and I wanted to find a recipe I could make in my small apartment without the preferred tools for BBQ. This recipe can be prepared the evenining or day before a party or event and served out of a slow-cooker at the event with fixins for people to dress the sandwiches as they please.
Ingredients
- 6-8lb pork butt
- Brown Sugar
- 1 bottle or can of root beer of choice
- 1 medium sweet onion, coarsely chopped (optional)
Instructions
- Trim excess fat from pork.
- Pour root beer into slow cooker and place pork butt into cooker. Spoon root beer onto uncovered side of pork and pat with light amount of brown sugar. Add onion if using onion.
- Place lid on slow cooker and cook on LOW heat for 12-14 hours (depending on thickness of cut). Flip every 2-3 hours and continue to pat with light amounts of brown sugar.
- Remove pork from slow cooker. Discard all the liquid.
- Using two forks, shred pork and return to slow cooker.
- Serve with sauce or dry rub of choice. Note: Recommend serving with coleslaw on the sandwich for proper enjoyment.
