Honey Balsamic Carrots
This is a simple side dish that I like. It brings a great flavor to the carrots.
Ingredients
- Rainbow carrots
- 6 tablespoons extra virgin olive oil
- 4 tablespoons balsamic vinegar
- 2 tablespoons honey
- Salt and pepper to taste
- Parsley (for garnish)

Instructions
- Preheat oven to 400°F.
- Wash and peel the carrots.Slice thicker carrots in half to get an even cook.
- In a large mixing bowl, combine the olive oil, balsamic vinegar, honey, salt and pepper. Toss the carrots in the mixture to evenly coat them. Place on an oiled baking sheet. I covered my baking sheet in foil since the mixture has honey and I didn't want anything to burn on the sheet.

- Roast the carrots until tender. This should take about 30-35 minutes.
- Season with salt and parsley when plating.
